Zucchini quiche recipe - as requested!

I'm so excited about the new comments to my blog! And a request even! Of course, I have to comply, so here is the original Zucchini Quiche recipe. Many thanks to my co-worker Ron's wife for giving it to me.

Zucchini Quiche

3 cups grated zucchini
1 small onion, chopped
1 cup Bisquick (whole wheat baking mix is a delicious, nutty alternative)
4 eggs
1/2 cup oil
1/2 cup grated Parmesan cheese
1/2 tsp dried oregano
2 tsp dried parsley
salt to taste

Mix all together. Bake in a deep dish pie plate at 350 degrees F for about 30-40 minutes (check with a toothpick).

The first time I made this was for our good friend Chuck who was visiting for the weekend. I shredded the cheese and zucchini in advance, so all I had to do was mix everything together in the morning and bake. It was unbelievably easy, and made a nice centerpiece for our breakfast.

Good Eatin' on New Year's


Happy New Year's everyone! Hopefully you are enjoying some good food to bring you luck in the coming year. While our pork & sauerkraut is cooking away in the crock pot, I checked out some other New Year's food traditions.

Steve's special Pork & Sauerkraut:

3-4 lb. pork roast (we used shoulder this year)
2 lb. bag of sauerkraut
1 apple, peeled and sliced
1/2 tsp. caraway seed
2 Tbsp. honey (we substituted 4 dates this year since we had them around)
8 oz. flat beer (Yuengling of course!)

Place the sauerkraut in the bottom of a crock pot and spread out evenly. Cover with apple, caraway seed and honey (or dates). Place pork roast on top and cook on low for 8 hours.

We're having our pork with mashed potatoes and brussel sprouts.
