Soybeans / Edamame

We had something new in our U-pick this week - Edamame!!! I've enjoyed it at restaurants before, so I was excited to have some from our farm.

One cool thing about them is that you just grab the base of the plant and pull the whole thing out of the ground. Then the pods can be pulled off the plant. They are attached pretty firmly, so it is a moderately difficult job!

I boiled them and then froze the ones we didn't eat.

lots and lots of plum tomatoes

Heidi, who runs the pickup, recommended cutting the plum tomatoes in half, and roasting them at about 400 degrees for 30 minutes. When they cool down, the skins just peel off and you can store the rest in the freezer to use later.
